Here is a cool salad for a hot summer evening. ENJOY!!
Greek Pasta Salad 3 tablespoons balsamic vinegar
1/3 cup extra virgin olive oil
3/4 teaspoon minced garlic
3/4 teaspoon chopped fresh oregano
3/4 teaspoon chopped fresh mint
1/4 teaspoon black pepper
12 cherry tomatoes, cut & quartered
1/2 red onion, sliced
1/2 diced seedless cucumber
¼ cup pitted greek olives
½ pound pasta of your choice (cooked and cooled),
orechetta is a good choice In a small bowl, add the balsamic vinegar. Whisk the olive oil in slowly so that it is thoroughly combined. Add garlic, oregano, mint and black pepper. In a separate bowl, combine the cooled pasta with the remaining ingredients. Pour the vinaigrette over the pasta and toss until well coated. Refrigerate for 1 hour before serving.
