Cheesecake
¼ cup melted butter
Crushed honey graham crackers or vanilla wafers
3 pkg. (8oz) Cream Cheese
1 can (15.25 oz) crushed drained pineapple
¾ cup sugar
1 ½ cups whipped topping
3 eggs
¼ cup toasted coconut
Preheat oven to 350. Mix crumbs and butter – press
firmly into pan. Beat cream cheese and sugar at medium speed
until well blended. Add eggs, 1 at a time, mixing just until
blended. Pour into crust. Bake 45-50 minutes until center
is almost set. Run knife around rim to loosen cake. Cool and
remove from pan. Refrigerate 4 hours or overnight. Garnish
before serving with pineapple, coconut and dollops of whipped
cream. YUMMY!!!
